In 2006, was approved as a professional member of the Australian Institute of Food Science and Technology.

Deputy representative for the smallgoods industry on the South Australian Meat Hygiene Unit Advisory Council.

Awarded 2006 Food Media Club of Australia scholarship for the Le Cordon Bleu MA in Gastronomy at the University of Adelaide.

Completed Smallgoods making course at Regency TAFE.

Written articles for Australian Meat Industry Council (AMIC) and Master Butchers Limited (MBL) newsletter.

2005 Started Foodology Consulting, a consultancy service aimed at providing small to medium sized food companies with nutritional information for their food labelling requirements.

2005 Judge of South Australian ‘Sausage King’ and Smallgoods competition in conjunction with Australian Meat Industry Council.

2005 Received certification as Associate Food Safety Auditor with RABQSA Australia.

2001-Present Employed full time as a Company Director at Olga’s Fine Foods in Adelaide, South Australia.

Responsibilities:
I have been heavily involved in product R&D with the development of a number of products which have entered the market place which include a low fat (3%) sausage, a range of marinated meat products and have been heavily involved in the development of modified atmosphere packaged schnitzels which are now being distributed in SA, NT and WA with one of Australia’s largest supermarket chains. This not only involved significant improvement in the quality of the product in general but also specific modifications to enable it to sustain shelf-readiness after significant amounts of travel. I am currently working on a range of new products in the low fat range and also some new products suitable for food service using novel food ingredients.
I have also completed a Food Safety Lead Auditor course and currently carry out internal auditing duties for the company. One project which utilised this training was the translation of all product lines to comply with new packaging and labelling laws which also included the implementation of a database solution to print labels, ingredients declarations and product information sheets.
In addition I have significant experience in all areas of the business including product manufacturing techniques and delivery of products to stores and from 2001-2003, I was the sales manager for the company.

The Pillich. I am going to try and call you soon. I love the website and wish that I was in Australia, so I could partake in all your culinary adventures. You should come to Philadelphia as the food here is good….The Foodologist does Philly!!
