La Casa Del Formaggio

As part of my commitment to promoting South Australian food producers, I would like to introduce the readers of ‘The Foodologist’ to La Casa Del Formaggio, a cheese company in South Australia specialising in Italian style cheeses such as ricotta and bocconcini. Whilst this is not a sponsored post, the company has kindly provided information and pictures for this article.

La Casa Del Formaggio opened its doors in 1988 through the efforts of Gerardo and Rosa Cicchiello. Gerardo was raised in southern Italy and in 1964 he married Rosa and came to Australia. Over time, he longed for the food he grew up with in Italy and wanted to pass on the tradition of cheese making. With this in mind and without any experience or formal business training, he opened a business in 1984 primarily selling home made continental products. Rosa began to make Traditional Ricotta in her kitchen and sell it through the continental store. The customer response was so overwhelming they decided to focus on cheese-making and in 1988 La Casa Del Formaggio was born.

Back in 1988, approximately 200 kilograms of fresh cheese was made by hand each week in a small kitchen, compared to today, over 30,000 kilograms each week. La Casa Del Formaggio has experienced strong growth and in 2009, the business now employs over 50 staff. La Casa is currently the Australian market leader in the Bocconcini category holding 53.6% share of the Bocconcini Market Nationally in Coles, Woolworths and Independent supermarkets. Their core market was once the Italian immigrant market, however over the last 10 years, Australian consumers have gradually become more educated in the flavours and tastes of food from around the world. They believe this consumer education has contributed to the strong growth of the Bocconcini market as they have seen more and more Australians from all nationalities purchasing our products.

In the early 90′s, Claude and Marisa, two of Gerardo and Rosa’s children became involved in the business, with Claude now assuming the role of Managing Director. Claude was recently awarded the SA Premier’s Young Leader award 2009 for his work in the South Australian Food Industry. Claude has also previously been awarded a Finalist in the Ernst & Young Entrepreneur of the Year Awards 2008, acted as a Committee Member for Flavour SA, 2004 – 2006 and a Committee Member Cheese SA, 2004 – 2005. La Casa Del Formaggio was also selected as a Finalist in the SA Premier’s Food Awards in 2006. Claude is currently a member of the City of Norwood, Payneham and St Peters Council’s Business & Economic Development Committee, Committee Member for the Cheese Maker in Residence Program and the business is a member of Advantage SA.

La Casa Del Formaggio continues to innovate and develop new products as the business continues to grow rapidly. They are proud of their Italian heritage and uphold their traditional values in the production of the highest quality Italian cheeses for the Australian market.

As of August, 2010 consumers will be able to purchase a pre-packed Full Cream Ricotta 1kg wheel from Woolworths supermarkets in South Australia.
La Casa Del Formaggio Full Cream Ricotta is soft and creamy with a delicate texture and pleasant slight caramel flavour. Conveniently packaged in a green plastic ricotta basket to maintain the traditional ricotta shape, the product can be turned out of the basket onto a platter and presented as a whole 1kg wheel. The product is sealed tightly in a bag to maintain freshness.
